Hotel Indigo Melbourne on Flinders is looking for a talented and dynamic Executive Chef to lead our vibrant Restaurants & Bars division. Reporting directly to the General Manager, this role will focus on delivering exceptional culinary experiences, driving profitability, and fostering a positive work culture. As the Executive Chef, you will be responsible for overseeing all aspects of food operations, including restaurant offerings (Bistrot Bisou), in-room dining, event catering, and more. You'll champion the Pro-invest culture and values, ensuring compliance with health, safety, and sustainability standards while promoting innovation and creativity in the kitchen.

Key responsibilities:
- Lead the overall direction and operational management of the hotel’s Kitchen operations, ensuring quality, consistency, and profitability across all areas.
- Work in conjunction with the Food & Beverage Manager to Lead the overall direction and operational management of Food and Beverage, ensuring quality, consistency, and profitability across all areas.
- Develop and execute food strategies for restaurant outlets, events, in-room dining, and other food activations, ensuring each aligns with the hotel's unique brand identity.
- Collaborate with internal stakeholders to enhance revenue and drive guest engagement through creative culinary initiatives.
- Manage Food & Labour costs, continuously seeking ways to improve efficiency without compromising quality or guest satisfaction.
- Mentor, coach, and develop culinary talent, fostering a culture of teamwork and excellence within the kitchen and food service teams.
- Ensure compliance with all regulatory requirements, including health, safety, and environmental standards, while maintaining a strong focus on sustainability initiatives.
- Oversee food safety and hygiene standards, ensuring all kitchen operations adhere to strict guidelines.
- Develop and maintain relationships with key external partners, suppliers, and industry stakeholders.
- Provide leadership and guidance to your direct reports, empowering them to grow and succeed in their roles.
- Use guest feedback and market insights to drive menu innovation and continuously improve the guest dining experience.

What We’re Looking For:
- Proven experience as a senior leader in kitchen operations, ideally in a similar hospitality environment, with a minimum of 5 years in a culinary leadership role.
- A passion for French-influenced cuisine and a strong ability to innovate and deliver memorable dining experiences.
- Exceptional leadership skills with the ability to inspire and motivate a diverse team.
- Strong financial acumen, with the ability to manage budgets and control costs effectively.
- Excellent communication, organizational, and interpersonal skills.
- A commitment to environmental sustainability and responsible business practices.
- Previous experience in opening new outlets and driving F&B promotions.
- Strong understanding of food safety standards, WHS practices, and industry regulations.
QUALIFICATIONS AND REQUIREMENTS
Qualifications
- Certificate 4 in commercial cookery or equivalent qualification’s in Hotel Management, Culinary Arts, or related field.
- Minimum 5 years of relevant experience, including significant management responsibility.
- Certifications or permits as required by local authorities (e.g., Food Safety, WHS compliance)
