As well as devoting our wine offering primarily to producers who are similarly committed to sustainability.  As the Assistant Venues Manager you will be report to the Venues Manager and assist with running Lamadonna Restaurant, Bar, Café and In room dining service that operate 7 days a week. As such, we are looking for someone who has a high energy , positive approach and most importantly works hands on with their team to achieve exceptional results.

Next Hotel Melbourne, located in Melbourne’s premier retail and dining destination 80 Collins, is seeking a professional and passionate Restaurant Manager to lead our Food & Beverage operations. You will oversee the restaurant and bar team, ensuring exceptional guest experiences, high standards of service, hygiene, and safety, while managing costs, staff development, and operational efficiency. This role includes collaborating with the Executive Chef on events and promotions, handling guest inquiries and complaints, optimizing manpower, and maintaining financial and operational controls. The ideal candidate has proven experience in restaurant or hotel F&B management, strong leadership and communication skills, commercial awareness, and the flexibility to work shifts, including evenings, weekends, and public holidays.
