Job Overview:
Under the general direction of the Senior Head Chef, you will be responsible for the cleanliness and hygiene of all food and beverage outlets and equipment. You will ensure all food handling duties are executed to maintain quality, safety, and hygiene standards. You will support the culinary team in delivering a seamless guest experience while adhering to Hotel Indigo brand policies and regulations.

Duties & Responsibilities:

Financial Returns:

  • Monitor and control stock and reduce wastage through proper service standards.

  • Log any discrepancies or damaged stock during deliveries for follow-up.

  • Store goods in designated food and beverage areas.

  • Promote recycling and waste reduction.

  • Follow departmental SOPs to reduce breakages and wastage.

People:

  • Assist cooks with food preparation and general kitchen duties as required.

  • Promote teamwork and quality service through daily communication with other departments.

  • Attend training sessions and complete any pre- or post-course work.

  • Adhere to brand standards for presentation, grooming, and punctuality.

  • Perform detailed shift handovers and foster cohesive relationships within the team.

Guest Experience:

  • Maintain sufficient supplies of food, utensils, and equipment.

  • Ensure dishwashing machines and kitchen equipment are functional and clean.

  • Oversee breakfast buffet setup, top-up, and pack-down.

  • Follow the Food Safety Plan and maintain personal grooming standards.

  • Address guest requests and complaints promptly and professionally.

Responsible Business:

  • Follow EVT Connect Hospitality and Hotel Indigo guidelines including HACCP, RSA, and Food Safety standards.

  • Maintain clean storage and waste areas and adhere to chemical safety protocols.

  • Assist in emergency preparedness, including fire, power outage, and cyclone procedures.

  • Champion hazard identification and reporting, and implement corrective measures.

  • Comply with company policies regarding Trade Practices, gifts, bribery, and data privacy.

Accountability:

  • Reports to: Head Chef or designate

  • Key Metrics: Internal Brand Audit Score, Food Safety Audit, Guest Love, Problem Handling, Overall Breakfast & F&B performance, and Performance Development Review

Key Relationships:

  • Internal: Hotel leadership team, colleagues, EVT Connect Hospitality

  • External: Guests, suppliers, and other external stakeholders

Qualifications & Requirements:

  • Strong verbal and written communication skills.

  • Professional, personable, and a “roll up the sleeves” attitude.

  • Effective team player who can make calm, measured decisions under pressure.

  • Experience in a similar role preferred; customer service and F&B experience advantageous.

  • Must meet legal requirements to work in Australia.

Experience:

  • Previous experience as a Kitchen Steward or in a similar role.

  • Knowledge of food and beverage operations preferred.
