We are looking for an enthusiastic and experienced Restaurant Manager to join our Food & Beverage team and lead operations across Mozzarella & Co, The Great Room, In-Room Dining, and Call & Collect.
Our dual-brand hotel brings together the approachable, lifestyle-driven experience of voco with the smart, efficient offering of Holiday Inn Express. While our guests may have different needs, our commitment remains the same — delivering authentic hospitality and creating experiences that guests remember.
About the role
Reporting to the Food & Beverage Manager, the Restaurant Manager will be responsible for leading the day-to-day operations of our restaurant and service team. You will inspire and develop your team, maintain exceptional service standards, and ensure every guest receives a warm, personalised, and memorable experience.

This role will be working on a 7-day, 24-hour roster, with a minimum and a maximum of 40 hours per week. The annual salary for this role is $70,000 to $75,000 per annum.
Key responsibilities
- Lead, coach, and inspire the Food & Beverage team to deliver exceptional service standards.
- Provide ongoing training, feedback, and development opportunities to support team growth.
- Create a positive workplace culture built on teamwork, engagement, and accountability.
- Manage team rosters while ensuring compliance with employment legislation and business needs.
- Support performance management, recognition, and team development initiatives.
- Ensure colleagues complete required brand and compliance training.
- Ensure all guests receive genuine, personalised, and memorable service.
- Build strong relationships with guests while responding effectively to feedback and requests.
- Champion brand standards across restaurant, bar, in-room dining, and takeaway operations.
- Analyse guest feedback and insights to continuously improve service delivery.
- Support loyalty programme initiatives and recognise returning guests.
- Assist in managing departmental budgets, labour costs, beverage costs, and operational expenses.
- Monitor stock levels, complete stocktakes, and investigate variances.
- Support purchasing, inventory control, and supplier management.
- Ensure POS systems, cash handling procedures, and financial controls are accurately maintained.
- Drive creative promotions and initiatives that enhance the guest dining experience.
- Ensure compliance with health, safety, food safety, and responsible service of alcohol requirements.
- Promote safe work practices and actively identify and manage workplace risks.
- Maintain compliance with Pro-invest Group and brand policies.
- Support sustainability initiatives and responsible business practices.
Qualifications & experience
- Minimum of 1 year experience in a Restaurant Supervisor or higher-level hospitality leadership role.
- Strong leadership skills with the ability to motivate and develop a diverse team.
- A genuine passion for creating exceptional guest experiences.
- Excellent communication and interpersonal skills.
- Strong understanding of hospitality operations, including labour management, stock control, and financial performance.
- Knowledge of food safety, RSA requirements, and workplace health and safety practices.
- The ability to remain calm, organised, and solutions-focused in a fast-paced environment.
- A hands-on approach with a willingness to lead from the front.
