About the role

We are looking for an experienced and passionate Sommelier to join our team. Reporting to the Director of Restaurants & Bars, you will have sole responsibility for the wine program across the hotel and its outlets while supporting restaurant operations to deliver exceptional guest experiences.

You will be responsible for curating and maintaining wine lists, driving wine sales performance, managing cellar operations, and providing expert guidance to guests and team members. This role plays a key part in creating memorable dining experiences through exceptional wine knowledge, food pairing expertise, and outstanding service.

Key responsibilities

  • Manage all aspects of the hotel's wine program, including ordering, stocktaking, invoicing, and supplier relationships.
  • Curate, maintain, and evolve wine lists across hotel venues.
  • Develop food and wine pairing menus and collaborate with the culinary team on guest experiences and events.
  • Deliver wine training and education programs to restaurant and bar teams.
  • Manage cellar operations and inventory controls while achieving sales targets and reporting requirements.
  • Support restaurant operations and private events to ensure exceptional service standards and guest satisfaction.
  • Actively promote and sell wines across all outlets.
  • Ensure compliance with all health, safety, and Responsible Service of Alcohol requirements.

 

Qualifications & experience

  • Minimum 2 years' experience within the hospitality industry in a senior role.
  • Proven experience or certification as a Sommelier.
  • Advanced knowledge of fine dining service operations, wine service, and hospitality best practices.
  • Bachelor’s Degree in Hotel Administration, Business Administration, or equivalent qualification.
  • Current Responsible Service of Alcohol (RSA) certification.
  • Excellent communication, presentation, and interpersonal skills.
  • Meticulous attention to detail and strong organisational skills.
  • Passion for creating personalised and memorable guest experiences.
  • Proficiency in Microsoft Office Suite, guest reservation systems, and POS systems.
  • Flexibility to work a rotating roster, including evenings, weekends, and public holidays.
  • High energy, enthusiasm, and a genuine passion for hospitality.

Position Overview: The Hotel Financial Controller (FC) is accountable for managing the daily financial and accounting operations for a portfolio of hotels across Australia and/or New Zealand. There are a total of 23 hotels (and growing), ranging from limited and mid-scale to luxury and lifestyle sectors. Depending on the complexity, an FC typically manages 3 to 8 hotels. This role is pivotal in ensuring financial accuracy and efficiency, requiring a strong technology mindset and a focus on automating recurring tasks to streamline processes. The FC reports directly to the Vice President Hotel Finance and collaborates closely with the Accounts Payable (AP) Manager and the Accounts Receivable (AR) Manager to ensure seamless collections and payments for the designated hotels. Additionally, the FC works with the Offshore Delivery Team to ensure the accurate recording of daily transactional activities, such as revenue journals and bank reconciliations. The FC is focused on both the commercial side of the business as well as compliance and reporting. The FC will ensure the continued improvement of processes which will in turn deliver meaningful management reporting including accurate profit and loss, balance sheet integrity, surprise free audits, yearly budgeting process, monthly forecasting, working capital and cash control.
