About the role

The Bar Manager – Harper Rooftop is responsible for the day-to-day operation, performance and leadership of Harper Rooftop, a 200-capacity rooftop bar and entertainment venue.

The role is responsible for leading and developing the bartending and floor service teams, delivering exceptional guest experiences, driving revenue and achieving agreed financial targets. The Bar Manager leads by example, fostering a culture built on integrity, transparency, accountability and genuine care for guests and colleagues.

The role has direct accountability for the commercial performance of Harper Rooftop, including revenue, labour costs, beverage inventory, stock loss and beverage margins. Revenue is driven through effective team training, sales initiatives, product knowledge, menu recommendations and consistently outstanding service.

The role has significant responsibility for managing the guest environment and crowd, particularly during peak trading periods. Strong people management, sound judgement and the ability to manage challenging situations are essential.

The Bar Manager is responsible for ensuring Harper Rooftop operates in accordance with liquor licensing, Responsible Service of Alcohol, Work Health & Safety and all relevant legislative and company requirements.

This is a highly visible, hands-on leadership role, with the Bar Manager expected to set the standard for service, guest engagement, professionalism and operational performance.

The Bar Manager – Harper Rooftop reports to the Venues Manager, with ultimate accountability to the Director of Restaurants & Bars.

Key responsibilities

  1. People & Leadership
  • Lead, motivate and develop the Harper Rooftop bartending and floor service teams.
  • Set clear expectations for performance, behaviour, presentation, service and accountability.
  • Lead with integrity, transparency and consistency, creating a positive, high-performance team culture.
  • Lead by example through a highly visible and hands-on presence during service.
  • Recruit, onboard, train and coach team members to continuously improve performance and service standards.
  • Build team capability in product knowledge, sales techniques, guest engagement and responsible service of alcohol.
  • Conduct pre-shift briefings and ensure the team is prepared for each service.
  • Manage staffing levels, rostering and deployment to meet operational and financial requirements.
  • Address performance issues promptly and fairly, working with the Venues Manager and People & Culture where required.
  • Ensure compliance with payroll, leave and other employment requirements.
  • Foster strong communication and teamwork within Harper Rooftop and across the wider hotel.
  1. Commercial & Financial Performance
  • Be accountable for the financial performance of Harper Rooftop, including the venue P&L, within the financial parameters and targets set by the Venues Manager and Director of Restaurants & Bars.
  • Meet or exceed agreed revenue and profitability targets and take proactive action where performance is below target.
  • Drive revenue through team training, upselling, sales initiatives, product knowledge and effective menu recommendations.
  • Monitor sales performance and communicate targets, results and opportunities to the team.
  • Manage labour costs through effective rostering, staffing and deployment.
  • Maintain strong control of beverage inventory, ordering and stock levels.
  • Minimise stock loss, wastage and variance through effective controls and team accountability.
  • Maintain beverage margins in line with agreed targets.
  • Monitor operational expenses and ensure spending is within agreed budgets.
  • Ensure all financial and cash-handling procedures are completed accurately and securely.
  • Work with the Venues Manager and Director of Restaurants & Bars on commercial initiatives, promotions, pricing and revenue strategies.
  1. Guest Experience
  • Own the guest experience at Harper Rooftop and ensure consistently high standards of service.
  • Lead by example in guest engagement, service delivery and problem resolution.
  • Coach the team to anticipate guest needs and exceed expectations.
  • Build strong relationships with regular and VIP guests and ensure appropriate VIP recognition.
  • Respond to guest feedback and complaints promptly and professionally.
  • Maintain service standards and guest experience during high-volume and high-pressure periods.
  1. Venue Operations & Crowd Management
  • Take responsibility for the effective operation of Harper Rooftop across all trading periods.
  • Maintain a strong presence during peak trade, live music, entertainment and events.
  • Manage guest flow, crowd behaviour and the overall atmosphere of the venue.
  • Work closely with security and other operational teams to maintain appropriate crowd control and venue safety.
  • Confidently manage challenging guests and de-escalate incidents while maintaining a positive guest environment.
  • Ensure venue capacity, licensing conditions and operating requirements are adhered to at all times.
  • Ensure the team understands and complies with responsible service of alcohol requirements, including managing intoxication and refusal of service.
  • Support the delivery of live entertainment and events, ensuring the bar operation is appropriately staffed and prepared.
  • Maintain a thorough understanding of liquor licensing and WHS requirements and ensure compliance across the venue.
  • Ensure incidents, accidents and operational issues are appropriately managed, documented and escalated.
  1. Beverage & Stock Management
  • Maintain strong knowledge of the Harper Rooftop beverage offering and ensure the team has appropriate product knowledge.
  • Provide input into beverage menus, product selection, pricing and recommendations based on guest preferences and commercial performance.
  • Oversee beverage ordering, receiving, storage and stock rotation.
  • Maintain appropriate par levels and stock availability.
  • Manage regular stocktakes and investigate variances.
  • Minimise wastage, breakage, spillage and stock loss.
  • Ensure beverage quality, presentation and consistency meet venue standards.
  1. Responsible Business
  • Ensure all operations comply with relevant legislation, liquor licensing, RSA, WHS and company policies.
  • Maintain high standards of cleanliness, hygiene, presentation and venue condition.
  • Ensure equipment and facilities are appropriately maintained.
  • Promote responsible and sustainable operating practices and minimise waste.
  • Contribute to a culture of safety, respect, inclusion and accountability.
  • Perform other duties as reasonably assigned.

 

Qualifications & experience

  • Proficient in hospitality systems, ordering, rostering and inventory processes.
  • Ability to work evenings, weekends, public holidays and peak trading periods as required.
  • Diploma in Hospitality / Hotel Management or equivalent experience preferred.
  • Current Responsible Service of Alcohol (RSA) certification.
  • Relevant WHS training or qualification desirable.
  • Proven experience as a Bar Manager, Venue Manager, Assistant Venue Manager or similar hospitality leadership role.
  • Experience leading and developing hospitality teams.
  • Experience managing a high-volume bar, rooftop, entertainment or similar venue.
  • Demonstrated experience managing revenue, labour costs, beverage margins and inventory.
  • Experience managing busy trading periods, events and entertainment.
  • Demonstrated understanding of liquor licensing, RSA and WHS requirements.
