About the Role
As Restaurant Manager, you will lead the operations of Wilmot Bar, Luke’s Kitchen, cellar areas, café and associated service teams. You’ll be responsible for delivering memorable dining experiences, driving financial performance, and developing a high-performing service team, all while embodying Kimpton’s values of individuality, creativity and genuine care.
This is a hands-on leadership role where you’ll set the tone, inspire your team, and ensure every guest experience feels personal, polished and unforgettable.
Key Responsibilities
Operations & Financial Performance
- Lead day-to-day restaurant and bar operations, ensuring exceptional service standards
- Manage budgets and control food, beverage and labour costs
- Oversee purchasing, stock control, equipment maintenance and repairs
- Drive promotions and experiences that deliver value and strong revenue performance
- Ensure all financial transactions are handled securely and accurately
People & Leadership
- Recruit, train, develop and lead the service team
- Create a positive, inclusive and high-performing team culture
- Manage rosters, payroll compliance, performance reviews and development plans
- Coach and mentor team members through regular feedback and training
- Work closely with People & Culture to support team development and performance
Guest Experience
- Ensure all service delivery exceeds guest expectations
- Handle guest feedback and complaints with professionalism and care
- Analyse guest insights to improve service, build loyalty and enhance experiences
- Participate in long-term planning to elevate restaurant performance
Responsible Business
- Maintain food safety, hygiene and compliance with all regulations
- Manage food and beverage inventory and minimise waste
- Monitor industry trends and competitor activity
- Support marketing initiatives and brand-led promotions
- Act as Manager on Duty when required
About You
You are a confident, people-focused hospitality leader with a passion for food, service and team development. You bring strong commercial awareness, attention to detail and the ability to lead with authenticity.
Skills & Experience
- Proven experience as a Restaurant Manager or similar leadership role
- Strong knowledge of food & beverage operations, inventory and BOH systems
- Excellent communication, organisational and leadership skills
- Working knowledge of the Hospitality Industry (General) Award 2020
- RSA certification (required)
- Ability to work a flexible roster including weekends and public holidays
Qualifications
- Diploma in Hotel Management, Business, or related field (preferred)
- Bachelor’s degree in Hospitality or Business (advantageous)
